Seasonal food - Brambly apple crumble and custard

As apples are in season through out Han and feb of a nice Sunday dessert why not try an apple crumble and some real custard all very easy to make if you know how for the crumble all you need is
Brambly apples (about 5 large apples will be enough)
Granulated sugar
Plain flour
Unsalted butter ( softened)

Now peel and core the apples and cut them up the size depends on weather you like the apples to go very soft or if you'd prefer a bit of bite to the. One you have your apples sprinkle them with a good hand full of sugar then take you softened butter and flour now the quantities for crumble topping are half fat to flour mix the butter to the flour by hand it should come out as a soft bread crumb consistency then you mix in a few hand fulls of sugar then sprinkle it over the apple in a Pyrex bowl and put it in the over for about an hour on gas mark 5 until golden brown

For the custard
300 ml double cream
300 ml semi skimmed milk
75 g caster sugar
8 egg yolks
1 vanilla pod (1 tsp vanilla extract)

Heat the milk cream and vanilla in a saucepan meanwhile whisk the eggs and sugar in a mixing bowl when the cream comes to the boil mix into the eggs and sugar then put water into the saucepan about a quarter of the way up the pan and put onto the heat put the mixing bown on the saucepan cook out the custard mix over the water this is called a Bain Marie Cook out the custard mix stiring throughout or else the custard will split if it does quickly whisk in some cold cream and you now have homemade apple crumble and custard enjoy
